I found this recipe on little house living. Here is the link to the original http://www.littlehouseliving.com/sweet-potato-toddler-snacks-gf-nut-free-dairy-free-soy-free-corn-free.html#_a5y_p=1334041
This recipe is gluten free, soy free, dairy free, nut free and corn free. I have not tried this one yet but am sure my wee boy will see these as a biscuit as i will be calling them that so he will eat them. I will most likely make these gluten free but i will use any baking powder as the recipe calls for a corn free version.
What You Need:
Instructions
If you haven’t already, cook and mash your sweet potato. For 1 c. you will need about one large sweet potato.
Add the other ingredients to the mashed sweet potato and mix well.
If your mixture seems dry, add a little more water to bring it to the right consistency.
Cut into fun shapes with mini cookie cutters.
Bake at 350 degrees for 5 minutes. Then flip and bake another 5 minutes.
Let them cool before serving, store in an airtight bag or container.
