Fudgy Flourless Chocolate Muffins

These healthy flourless chocolate muffins are seriously good. They are also so easy to make.  All you need is 4 ingredients.

My boy loves these, to him its just a sugary chocolate muffin but i know its a better healthy muffin. If your not fond on using Mable syrup or chocolate chips why not try them with honey and raisins.  Use sunflower butter if your little one has a peanut allergy.

Method:
Preheat oven to 180*C/350*F Gas 4.
In a bowl combine all the ingredients until all is mixed well, i would suggest a food processor for this
Once everything is mixed well, spoon batter into lined muffin cups. The batter will be very sticky.
I topped a few of mine with milk and white chocolate chips.
Place muffin pan in the oven and bake for about 15 minutes.
Wait until these are completely cooled before removing from the pan.
Store these muffins in the fridge. They should last at least 5 days.
You can also freeze them for longer storage

These Fried Potato Balls make the perfect side dish or appetizer. They are perfect for leftover mashed potatoes. They are so crunchy on the outside and creamy inside.

I will tell you that these are great for those little ones that wont eat their mash.  All though my son loves his mash so it doesn't matter to him but he did devour these. He loved them. He called them spud balls and he said they were yummy so i guess they are a winner for the kids.


Ingredients:
  • 2 Medium sized potatoes 2oz Butter, Softened
  • 2 Egg Yolks
  • 2 Eggs, beaten
  • 1/2 cup Corn flour
  • 2 Heals of a bread Loaf
  • 1/2 tsp Paprika
  • 1/2 tsp Oregano
  • Salt and Pepper

Method:
Boil your potatoes until soft, then mash them up with the butter and a little salt and pepper. Let them cool and stir in the 2 egg yolks. Cover and allow to cool completely in the fridge.
In the meantime brake up the heals of your gluten free bread in a processor along with salt, pepper, paprika and Oregano. This will make Gluten free Bread Crumbs.
Now set out your mash in 1 bowl, your corn flour in another, then your beaten eggs followed by your Breadcrumbs.

Bare Necessities Fresh Fruit Pops


I just love this recipe. It wont just be for youngsters i have to admit. It will be a while before i try my wee buy with this one though as he only likes his ice pops during the summer. Hes not much into cold things unless he is very warm.

Ingredients:

  • 2-3 Kiwis, peeled and sliced
  • 1 pkg Fresh Strawberries, sliced
  • 2-3 Tangerine Oranges, peeled and sliced
  • 1 pkg Fresh Blueberries
  • Coconut Water

Method:
Add cut up fruit to popsicle mold — it’s ok if there are spaces. You don’t want the fruit to be packed too tightly.
Pour in coconut water until it reaches the top of each popsicle mold.
Freeze the molds overnight, or until solid. Once frozen, remove from mold and serve immediately.
